12 jalapenos about the same size, cut in half, and ribbed and seeded
1 package of no nitrate bacon with the bacon cut in half
16 ounces of goat cheese
1. Preheat the oven to 425.
2. Line a roasting sheet with foil and place a slotted rack on top. Stuff the jalapenos with about a tablespoon of goat cheese. Wrap the pepper with the half piece of bacon. Line them evenly apart on the rack. Repeat til all the jalapenos are stuffed and finished.
3. Bake for 25 min or until the bacon is nice and crisp.
Note: You can wrap with prosciutto and it comes out amazing too!
