Salsa Verde


1 lb tomatillos husked and washed
½ medium sized white onion,, halved
half a garlic clove, peeled
1 jalapeno ribbed and seeded (unless you like it hot keep it)
½ bunch of cilantro roughly chopped
2 limes zested and juiced
Salt to taste


1. Put all the ingredients but the cilantro and lime, in a large skillet with water covering just the base of the tomatillos.
2. Bring to a boil then cover and let simmer around 8 minutes.
3. Take all ingredients and put it in a food processor with some of the liquid.
4. Add the cilantro, lime, and salt.
5. Puree til blended.
