Champagne Vinaigrette


1 shallot minced
1 garlic clove, minced
½ cup champagne vinegar
1 cup good quality olive oil
½ cup water
2 tablespoons Dijon mustard
Salt and pepper to taste


1. Put all ingredients into a closed container. Shake vigorously til well combined.

Note: This dressing goes great with a fall style salads.
