4 cups spring mix
1 cup cubed and roasted red beets
1 cup cubed and roasted butternut squash
2 large rainbow carrots, ribboned with a veggie peeler
2/3 cup pomegranate seeds
2/3 cup roasted walnuts
2 ounces of crumbled goat cheese
Champagne vinaigrette (see our recipes)
1. Toss all the ingredients in a large bowl and lightly drizzle the dressing over the salad, coating evenly.
Note: To make it into more of a meal add some wild rice and roasted chicken! If you don’t like something omit it or add to it. If you don’t like goat cheese go with feta! If you don’t like walnuts choose pecans!
